Rogan Josh: This is the first food item which comes to your mind after you read Kashmiri cuisine. Rogan Josh doesn’t need any introduction. Every meat lover has tried or wants to try this iconic lamb curry. Rogan Josh was first introduced by Mughals and now it is a staple at every Kashmiri party or special occasion. The lamb is marinated in yogurt and then cooked with onions and spices. A lot of Kashmiri red chilies is added to give it the famous red colour.

Dum Aaloo: Dum Aaloo is to vegetarians what Rogan Josh is to non-vegetarians. Potatoes are one of the most common ingredients in our kitchens. There is hardly anyone who doesn’t like our humble Aaloo. And Kashmiris have managed to create a beautiful dish out of it. Potatoes are fried and then cooked with yogurt and a lot of spices which gives it a mouth-watering aroma.

Modur Pulav: When in Kashmir, you should definitely try the saffron. Saffron is grown in Kashmir and is used in many dishes.
