Kashmir, rightly called “Heaven on earth” does not just intrigue your eyes but your taste buds as well. Kashmiri cuisine is a blend of Pandit-Mughal-Afghan- Persian cooking styles which is unique in itself. Here are few of our favourite dishes from kashmir, which you must try on your next visit.
Rogan Josh: This is the first food item which comes to your mind after you read Kashmiri cuisine. Rogan Josh doesn’t need any introduction. Every meat lover has tried or wants to try this iconic lamb curry. Rogan Josh was first introduced by Mughals and now it is a staple at every Kashmiri party or special occasion. The lamb is marinated in yogurt and then cooked with onions and spices. A lot of Kashmiri red chilies is added to give it the famous red colour.
Dum Aaloo: Dum Aaloo is to vegetarians what Rogan Josh is to non-vegetarians. Potatoes are one of the most common ingredients in our kitchens. There is hardly anyone who doesn’t like our humble Aaloo. And Kashmiris have managed to create a beautiful dish out of it. Potatoes are fried and then cooked with yogurt and a lot of spices which gives it a mouth-watering aroma.
Modur Pulav: When in Kashmir, you should definitely try the saffron. Saffron is grown in Kashmir and is used in many dishes. It is the main ingredient in Modur Pulav, which is basically sweetened rice prepared using milk, ghee, cinnamon, dry fruits, cardamom, and of course a little saffron. This one is for all the sweet-toothed people out there.
Goshtaba: Popularly known as the “delicacy for the kings”, this is minced mutton cooked in flavoured yogurt gravy and spices. We promise that you will want for more after you eat these delicious balls.
Kahwah: Riding a Shikara on Dal lake with a cup of kahwah in your hand. Doesn’t it sound romantic. When in Kashmir, you can drink kahwah anytime and never get bored of it. It is the ultimate drink you need in the cold weather. It is prepared by boiling green leaves and adding ingredients like saffron, cardamom, almonds, cinnamon bark and honey which gives the colour, aroma and taste to this heavenly drink. Care for a cuppa? We definitely do!
